You can these beans at most supermarkets. They have a very mild flavor and add a wonderful texture to the meal.

I was looking for an easy receipe for oxtail and I found it here!!! Bravo!!! My Jamaican friends enjoyed the food, and I WILL do it again,m at least once a month!!! I used the crockpot, and cook it at slow for 6 hours, everything was smelling good when I came back from work. Only had to cook some rice and beans and voila!!! Diner's ready in 10 minutes!!!

Thankyou, microdac. I looooooove oxtail. I just wanted to chime in one last time to mention that a cheaper alterative might be beef shank (leg). It has the marrow bone in the middle, and the marrow cooks out into the stew. There is more actual meat per pound with beef shank.
Oxtail is king, but beef shank also has plenty of gelationous collagen (which is not fat) which is one key to making a great stew.
I like oxtail the next day, cooling off the cooked dish overnight, and removing the hardened fat off the top.
A freindly suggestion from me to you would be to leave the carrots in larger pieces to survive the hours of cooking and leftovers re-heating. Or, add them later. No matter what, oxtail is sooo succulent, and really hard to mess up.

in SoCal, Oxtail usually runs about $4.50/lb. I bought a few pounds a couple of months ago for $3.29 at a regional Mexican owned supermarket. A freind of mine told me he paid $2.89/lb. at an Asian market.
I'm learning new stuff all the time. I love how the frying of the meat that way, makes its own roux, rather than searing the oxtails...then making a butter and flour roux.
