If you've ever heard of frostbite... then it's the same thing.
It literally freezes and kills the cells, the same as frost bite. It's sometimes known as a burn.
Go get a deoderant can and spray it on ur hand right up close for a few seconds, and you'll "burn" the skin and technically you'll have partially frozen it :)
BTw, dont actually try that as it will hurt and give you a scar
The Leidenfrost effect is a phenomenon in which a liquid, in near contact with a mass significantly hotter than its boiling point, produces an insulating vapor layer which keeps that liquid from boiling rapidly. If liquid nitrogen was poured onto you're hands, it would evaporate before it did anything, so a layer of vapor would be protecting your hand from the liquid nitrogen, which is why the container doesn't freeze over.
@dirki91 You can touch the liquid nitrogen itself very briefly due to the Leidenfrost effect. Don't dare touch metal attached to liquid nitrogen though...

'cause it's so cold it can "burn" your hands,
well actually you can touch it with your hands 'cause it creates like an area of gas around 'em, but there used to be a lot of injuries anyway
