I thought the problem with msg is that it makes things (anything - nutricious or not) moreish so it encourages us to eat more then we need/should and then we crave it so we keep going back for more. If its added to fatty foods with poor nutitional value then we are eating more then we would without it and then craving to eat more of it. So we overeat and get no quality nutritonal value from it. So perhaps msg on its own is not dangerous buts its effects and its consequences are.
@FortNikitaBullion As long as it does not make its way past the blood-brain barrier (which shouldn't happen under normal physiological conditions), glutamate is fairly safe.
I wont contest that the flavor is real in scientific sense but the flavor profile of umami is so broad and weirdly vague that its pointless to even discuss except with hardcore foodies.
Hmm... I think I get it. MSG is similar to WTF, since they both enhance the enjoyment of food. There is only one difference: MSG must be used in moderation while I can completely gorge myself on WTF, right?
I just watched a video on Jamie Oliver's channel about pupusas, and the video had barely any information and I would like to know more about them, and it seemed that other people found the video very informative, so my request for FTW is pupusas. thanks :3
In Europe we have a spicemix called Aromat made by Knorr. It contains MSG among other things. It's something I've always used on boiled eggs instead of just salt. It's goood.
that is very interesting... I knew about the umami flavor but didnt know it was msg, I knew about msg but i didnt know it ocured naturaly in ingredients I tought it was a chemical aditive, thanks to you I will go to bed a little wizer. I woudnt sprinkle an extra dose in my food however.
Wow, great episode, very informative! I still hear about the MSG myth around me, so it was refreshing to hear that it's all kind of BS. And of course, now I've learned there's a word to one of my favourite flavours, haha. Thanks, Dan!
Really great info, I always wondered why people didn't want msg in their food and what it was myself. By the way quick question, are you still doing vendor tv?
UMAMI BOMBS: Tomato Paste, Anchovies, Worcestershire Sauce, Fish Sauce, Dark Chocolate, Dark Soy Sauce, Kombu Kelp, Marmite, & Dried Shrimps (*see kimchi). At least those are my favorites!
i used to this i was a savourieser but now i know i'm an umami-iser :) lol! trying to explain to people that i have the opposite of a sweet tooth is very difficult. now i can! :) x
this episode is perfect, i learned about umami in psychology but i never really understood it. Now i have a better sense of it, and i never knew MSG was a natural ingredient.
I saw some Kikkoman commercial and they mentions umami but it wasn't very specific as to what it was. Although it did mention something about flavor. This is good to know. And it's good to know that MSG is safe to consume. Thanks Dan!
Umami isn't a food, it's a flavour. MSG doesn't equal umami. Food doesn't have umami "in" it. Umami is an adjective.
