I read somewhere that Eddie Fiola is not a stuntman and did some mountain bike jumps on Pacific Blue. And he does several car stunts as well.
Trivia: Although Mike Domiguez did that tailwhip popout, but I think it is Joe Johnson who first perfected it on the vert ramp.
