I like how there's that uncertain tremor in his voice at (1:00) when he notices he's cut through the spine by accident, but to his credit he recovered quite well.
My issue is that, in my opinion, the first cut on each side of the fish should be in the other direction, i.e. diagionally into the head, saves more meat that way. At least that was how I was trained.
