That is not stopmotion. This trick is done using fishing wire or any kind of invisible string. You fold the dollar poke a hole with a pin and put the string though, taping one end to the dollar. Then when you unfold it and pull the string in a way the audience cannot see (0:03 his hand pulling off screen) giving the impression that it is folding by itself.
