Paneer is more tasty when you add a bit of salt to it when you are kneading. Makes the flavor MUCH more interesting. While whole milk is optimal, you can use lower fat milk and still achieve very good results. I've used vinegar (1 cup/gallon of milk) in place of lemon juice to good effect. Just add enough to get the milk solids to congeal.

How long do you have to nead this stuff? Been doing it for ages and the consistency is still quite brittle. Is that right? Guess I should have bought some pre-made so at least I knew what I was aiming for.

@RodHullIOnceWasHim You would probably need to knead it for a week to get the grains out of it. Make sure you squeeze as much water out of it as you can, then knead it until it sticks together. It can take up to 10 minutes, and don't be afraid to be brutal with it. The more energy and compression you put into it the better it will be. It'll be crumbly at first, but keep with it...
I also tried this but it wasn't very successful. The strained liquid wasn't as clear as in the video - it just looked like, er, milk. The amount of paneer was far less than the you made and quite moist by comparison - it didn't require kneading. Maybe my milk didn't curdle enough? The taste was quite disappointing too - it was very bland. I used a new fine mesh fibre dishcloth (the traditional sort) to strain it which worked well.

im sorry but just because the sock comes under hosiery i felt disgusted, why use that when all you need is some thin cotton cloth like voile or cheese cloth!! otherwise i like all your vids.

@tt02yy The cheese comes from the fat in the milk, so if you use light milk you won't get much cheese coming out.

@MrNajmNajd Anything acidic is fine. Lemon juice - citric acid. Vinegar - acetic acid. You can even use yoghurt.

@loverboy375 You only need the juice of one lemon to turn the milk acidic. You can achieve the same effect with yoghurt!
