  • What a nice simple recipe for cheese making although the taste will differ from supermarket bought paneer simply because it will be the real thing as opposed to mass produced cheese.

  • @dherring01 You would need to press it into a rectangular mould, then cut into cubes.

  • Can you use other milks instead of whole milk? Such as... Light milk to make this paneer?

  • @tt02yy The cheese comes from the fat in the milk, so if you use light milk you won't get much cheese coming out.

  • @MrNajmNajd Anything acidic is fine. Lemon juice - citric acid. Vinegar - acetic acid. You can even use yoghurt.

  • Paneer is more tasty when you add a bit of salt to it when you are kneading. Makes the flavor MUCH more interesting. While whole milk is optimal, you can use lower fat milk and still achieve very good results. I've used vinegar (1 cup/gallon of milk) in place of lemon juice to good effect. Just add enough to get the milk solids to congeal.

  • That would be the "curd" not "paneer" per say, paneer is the finished product once you have flattened it out and lightly fried it on the pan ( India style ) with basil and other bits and bobs for garnish, but a great video nonetheless, and a SUPERB tip with the stocking in place of cheesecloth, especially when must of my local stores don't carry it! Cheers! And thanks again for your efforts!

  • How long do you have to nead this stuff? Been doing it for ages and the consistency is still quite brittle. Is that right? Guess I should have bought some pre-made so at least I knew what I was aiming for.

    Is it slightly grainy when squashed between fingers?

  • @RodHullIOnceWasHim You would probably need to knead it for a week to get the grains out of it. Make sure you squeeze as much water out of it as you can, then knead it until it sticks together. It can take up to 10 minutes, and don't be afraid to be brutal with it. The more energy and compression you put into it the better it will be. It'll be crumbly at first, but keep with it...

    u can use cheese cloth instead. u will find it at any grocery store .. fold it twice or thrice... or any thin clot that u might have at home..

  • I also tried this but it wasn't very successful. The strained liquid wasn't as clear as in the video - it just looked like, er, milk. The amount of paneer was far less than the you made and quite moist by comparison - it didn't require kneading. Maybe my milk didn't curdle enough? The taste was quite disappointing too - it was very bland. I used a new fine mesh fibre dishcloth (the traditional sort) to strain it which worked well.

  • @mickypoo4622 You did use full cream milk, yes? Paneer is a bit like mozzarella in taste - quite bland.

  • @TitliNihaan Oh yes, 'whole' milk. I only drink skimmed but I guess that 'whole' is the same as 'full cream'. Maybe it needs 'gold top'?

  • Hi, I liked your way of making the paneer and decided to try it at home. I made use of two fresh lemon and squeezed out the juice to add in the mixture. Well it did not turn out to be disastorous but i would say rather catastrophic.

    Could you please tell me if I wam to use fresh lemon and juice it or use some other form of lemon juice.

  • @loverboy375 You only need the juice of one lemon to turn the milk acidic. You can achieve the same effect with yoghurt!

    Can you describe to me in what way it was "catastrophic"? What happened????

  • im sorry but just because the sock comes under hosiery i felt disgusted, why use that when all you need is some thin cotton cloth like voile or cheese cloth!! otherwise i like all your vids.

    Fascinating video, would like to try this sometime considering it's so simple to do. The process reminds me alot of how tofu is made.
