I'm pretty sure I got violently sick from a mango a while ago, so I just made a simple raspberry sauce. Hats off to Italy for creating such beautiful food.
can use agar agar (made of seaweed) to replace gelatin.... but if you use agar agar, use only small amount of it because it turns your 'pudding' type of dessert into 'hard jelly' if you used it too much. I suggest for any first time user of agar agar to do trial and error by boiling some agar agar in plain water until dissolved and let it cool to set and check the results and consistency.
@LydiaCosmetics most kosher gels are vegan and you can use as a sub - and there's also some gels made out of seaweed - if you google it you can find them online - they all work as subs for regular gelatin

@odaymustdie No, you don't have to. Follow the instructions on the package to know how to dissolve it
