well jbjetairways i am working for airindia as a 777-300er pilot for 6 years .flaps can be set to 5,10,or 15 but depending on takeoff speed and runway length.normaley most of the pilots set it to 10.

It can be the sound you here when one of the cabincrew members phones to one of the members at the other side of the cabin. You hear that sound everywhere in the cabin. Passengers don't know what sound that is but the members of the cabincrew do know it. When they hear it, they know that they have to take of the phone.
That Ding Noise, Just after takeoff isnt the seatbelt sign, in some planes, when the landing gear (Wheels) are fully up and locked it makes a ding noise. :)

It's not its the sound of the engines during taxi. Sounds like the a/c is running on the lowest setting so the engine sound is magnified.
