Kinda ironic since french fries didn't originate in France. They were first made in Belgium but were eventually popularized in American cook books, restaurants, fast food chains - you would seldom see a recipe in an authentic French cook book for french fries

You can heat the first frying at 250 or 285 take them out & heat the same oil to 400... it heats quickly & they still puff...
