The fastest I can make a large pepperoni on average is about 40 seconds. If I try to go any faster the dough tears, especially if its crappy dough. I personally like dough that has set in the cooler 3-4 days unproofed and slapped cold. The OER lady would give me a 1 STAR if she read this, heh!

He's not in Australia. And you're wrong anyway, it's not mandatory to wear gloves while handling food in Australia (or certainly not all of Australia). Wearing gloves just isn't necessary if you wash your hands regularly, and can even be counterproductive.

That is a good policy where gloves are used.

Wearing gloves isn't required in Victoria (I don't know about elsewhere in Australia). It also isn't required in the UK, where this video was filmed. Disposable gloves just aren't necessary for good food hygiene.

Im a manager at Pizza hut and its not mandatory to wear gloves AT THE MAKETABLE... at the cut table it is mandatory tho, As long as your following proper hand washing procedures and you dont have fake nails, cuts on your hands or anything that might contaminate the food on your hands, you can go on maketable WITHOUT gloves and its NOT against pizza hut or health safety policies!!!!

No offence, but dominos is far from the best. Atleast where I live. I used to work in pizza place and this is nothing. I remember opening on sunday morning as a manager and my cook didn't show up and I only had one driver. Driver was on a drives and I was the only one to do everything in the store. Main reason I don't like Dominos is that you don't have Pan crust, wich is my favorite. Maybe in Canada you do, but not here.

Oh, during regular week we used to have cook come in, do all the prepping, set the food up and leave. But on Sunday we had cooks all day. So one Sunday cook didn't come in. So I had phones ringing off the hook, like 5 customers in line up front and about 10 orders to make on the screen. Agreed, Dominos current pan pizza is a joke. The so-called deep dish isn't even cooked in a pan anymore, but a pre-made shell put on a screen. Dominos dumped the TRUE deep dish Pan Pizza in favor of FAST. As a long time Dominos employee, I still know how to make the original Deep Dish. The downside to a true deep dish, it takes some prep work (mostly proofing time, or raising the dough). Dominos current dough takes MUCH longer to raise than dough designed for Pan pizza. I hope this helps.

Unless its one of the really busy stores then you may need more hands on deck. I can slap between 100-140 pie an hour, and im no where near the best in my area.
