Not really, like any game, the starting colossi are easy, but the harder ones are more fun, because the way you defeat them is like a puzzle, plus it really feels like an accomplishment.

After you beat the game on a certain difficulty setting go up to each of the statutes in the big structure that you start in and pray by them. I think you press O or something to pray, can't remember exactly but it is just one button. Anyway, when you pray to the statue it asks if you want to do a time trial of that colosuss. Just keep praying to different statues until you find the one you want to fight.

you do time attack mode by beating the game and pressing circle in front of the colossus's statue. not the colossus's dead body. the statue that represents the colossus. like when you beat the colossus, the statue breaks. THAT statue. the ones in the temple with the girl.
