So does this allow job traits to stack? Like for example, DRG's ACC bonus? Would you gain the job trait ACC Bonus from your main and again from your sub? If so, this is not only neat but useful and potentially very exploitable.

No, Its not PC only... I first tried it on my PC account and got it on the first try... so then I tried on my Xbox 360 account and got it but took a lot more then 1 try

I can confirm this is a glitch, not a hack.
How? I did it years ago, accidentally, switching my jobs around too fast... ON PS2.
I actually thought this video was of the PS2 version at first because of the screen resolution..
