@xXWolffangxXx You need the yeast for the dough to rise... and you just end up with a lump of hard bread, not very tasty. I have never tried using a substitute for yeast before. But from googling it apparently you can get a substitute by mixing together baking soda and lemon juice, but I'm not too sure how much or in what proportions nor how well this would work.
@MrMohamedMan When initially preparing the yeast you let it sit for around 10 minutes. After you've added it to the bread you let the bread rise for about 2 hours, if you're in a hurry though it probably would be fine after only an hour. That varies though based on how warm the room the room is. If it's not warm enough it won't rise at all, so that's the most important thing.

@riechanster Yes that is right, I usually fill most of them with cream cheese and leave a few empty since my younger sister doesn't like cream cheese. And it's still yummy without filling as well. ^^

To fill it you just take a small ball of dough, squish it until it's flat (but not too much or the filling will seep through) put a little bit of filling in the center of the flat dough, and then take the edges of the dough and wrap it around the filling. I have yet to try any other fillings, though I've been meaning to and will experiment at some point. But putting nuttella on the finished product is also yummy. :3

@12enma12 I just leave it on the counter and cover it with a towel, as long as the room is warm enough (I think it needs to be at least 68 degree Fahrenheit for it to work) then it'll rise fine on it's own. And yes, I like to melt the butter before putting it in so the butter I used is melted, though it doesn't have to be. I just find it easier to use that way.

lol I watched yakitate japan and they said melon bread was called melon bread cause of the shape itself too =O. I really want to attempt their special version of melon bread which uses normal breadbase with a melon cream in the middle with a cookie outter crust you place on top. Something like a smore you don't roast with melon instead of chocolate. That way the melon bread actually taste like melon =-D

Ya, it's called that because the bread is supposed to be shaped like a melon, or at least similar. For some recipes it calls for melon juice instead of lemon juice, when I don't use lemon juice I like using cantaloupe juice. :3
nu~ the cracks make it look like the rock melon. its a cantonese recipe. butthe japanese thought it was nice and improved on the recipe. The cantonese one is called "pineapple bread" because the cracks resemble a pineapple. i prefer the japanese one because the canto one isnt as good. the dough is sticky and feels uncooked.

I've never tried so I'm not sure, but I think you just use a fork and pull in across the dough before cooking it.
