can i not use potato starch powder? please reply because i've watched lots of korean drama and in most of them they were eating this noodles and plus it looks really good!
@blackoutjj you have to use it lol. It's not a sauce if you choose not to, Instead, it'll just be like a soup. I'd say the powder is a big touch in the recipe
@snsdlovermuahahaha no, you need black bean paste. Check out the photo in the ingredient section on my website. It's called chunjang or jjajang. It's sold at a Korean grocery store.
@somewhatcompetent I don't see why not, I could be wrong but I think when i had these noodles at a restaurant there was no meat in them... although i would've liked some pork belly nom nom nom :D
@ptima993 yes, you can. I sometimes use spaghetti noodles. Check out the recipe and ingredients photos on my website. You need to buy chunjang (blackbean paste) which is sold at a Korean grocery store.
@NazeeraSHINee94 The noodles are more chewy than udong noodles. Check out the photo of the noodles on the ingredient section on my website, please. Happy cooking!
is it the taste will be different if i change the corn starch with rice flour? Because i saw a person use rice flour to make pumpkin porridge..hehe..sorry for asking to much questions..i'm still beginner in cooking..
@NazeeraSHINee94 Yes, use corn or potato starch flour for this recipe. Check out the written recipe on my website. The measurements are modified. More detailed info, tips, and the photos of each ingredient are in the recipe.
can i replace pork with beef?because i dont eat pork.. And, i dont eat zucchini and cucumber too..so is it my jajangmyun still taste good if i dont put zuchini and replace pork with beef?
is pork one of black bean paste ingredients?? I really wanna make jjajangmyun but my friend told me there's pork in black bean paste ingredient.. please reply ;____; thanks in advance :)
@ithry18 jjajangmyun (짜짱면) is a korean dish served in almost all korean restaurants. You should try looking for one near where you live. It's very delicious, I ask my mom to make it for me all the time! (Having a Korean family = non stop korean dish goodness)
hey guys!! just made this dish today..It turned out great for my first try :) i recommend that you follow her intructions to the T but if you're gonna try to eye ball, try not to use too much potato starch. It'll taste a little gritty. Also, use a little more black suace or add a pinch of salt/fish suace to make it more flavorful. Also, Use more onion!! I know some of you are like gross...but once it cooks, it'll taste bery sweet. Well good luck to you guys!!! Thanks you Maangchi!!
Is this black bean paste with garlic ? I can't find the paste. Only miso paste, soybean paste at our asia market. I saw the black bean paste with garlic of Lee Ku Mee or sth. Can I use this ?
@canada1901 I'm sorry to hear that. This recipe is modified actually. Read the recipe and the video on my website. Let me know the result if you make it again.
@Maangchi as I think I found 2 problems that might make the flavor not right. The radish tastes really bitter, it wasnt big as yours in video, maybe not the right one? 2nd is I might put a bit too much water in so I had to add more black bean paste :D. anyway, I will try again, ty for reply. wish you all the best
@canada1901 yeah next time if you make it again, I'm sure it will turn out delicious because it sounds like you already know what you are supposed to! : ) Happy cooking!
Can you save the sauce and use it for later? Do I freeze it or put it in the refrigirator?... and how long does it last until it spoils? :P Thanks Maangchi! :)
@SinnieZhao =) you've probably figured it out by now, but just in case, Maangchi already has a video on how to make jap- chae... you can visit her website or just go into her youtube home..
Hello! I bought the Jajang sauce and the noodles. Can I just boil the sauce with water and ladle it over the noodles WITHOUT any veggies and meat. I can't be bothered to get meat and stuff. Can it be cooked that way? Thanks!
@mingcheng123 Check out the recipe on my website. The measurements are modified. And follow the direction step by step closely if you like to make delicious jjajangmyeon.
Really a mouth watering dish.........i want to have some.....thank you maangchi for sharing i am watching it eating by peoples in Korean movies and dramas alot.
i have a jajangmyeon noodles, the instant one, but I dont like the taste! But still i want to eat the home made one, maybe the taste will be different by then. :((
@rocketir16 Yes, real homemade jjajangmyeon (black sauce on noodles) is much tastier than instant jjajangmyeon. Let me know how your homemade jjajangmyeon turns out if you make it later.
This was my favourite food when I used to regularly visit Korea on business trips. I was pleased that when we cooked it to your recipe it tasted just like I remembered it. We substituted Parsley Root for the radish.
@lovebugling yes, the blackbean paste is very salty, so you don't need salt. If you want to make jjajangnyeon, please check out the recipe on my website. The measurements are updated.

Thanks a lot! I loved this black bean noodles when I was in Korea a few years ago. Today I found your video, so I hurried to my asian food supply store, bought all ingredient like a maniac and give it a try know, hope it works :)
@tealson Please check out the recipe on my website. I corrected some measurements from this video recipe and posted on my website. When I filmed this video, I was not familiar with measuring stuff. : ) My written recipe on my website is very exact. If you follow the recipe step by step, you will make very delicious jjajangmyeon. Let me know how it turns out through my website please.
If anyone is curious where to buy 'chunjang' (black bean paste) & can't find it in any local Asian markets: hmart [dot] com sells this exact one Maangchi is using. ^___^
When did using olive oil in Korean cuisine become popular? I have seen it in lots of Korean grocery stores, but I don't think it is a traditional Asian oil....?
@0126achang Please check out the ingredients photos on my ingredient section on my website. To make delicious jjajangmyeon, you have to get black bean paste called chunjang sold at a Korean grocery store.
@0126achang I used black bean garlic sauce and I thought it was pretty good. However, the only time I've had jjajangmyeon was when I've made it so I dont know how it compares to the real thing. I also used ground turkey instead of pork or beef.
I loooove jjajangmyun!! I’ve made it twice so far and tho it looks kind of hard to make, it’s actually really easy. It’s like a Korean version of spaghetti. =) Mmm-mmm, my mouth is starting to water! Lol.
I always thought it was a Chinese food till I could not find a single Chinese restaurant that actually made this noodle dish. It is like a fortune cookies...they are available at every Chinese restaurant in the US but it is actually an US invention.
@fcia THis is in fact partly a chinese dish. It was made by Korean and Chinese mine workers back in the days when they had only black beans and noodles and the ingredients to make jjajangmyun and it was a hit! its not american invented in any way
People call it chinese food because korean foods arent usually with myun and chinese foods are like that, and they make it in some chinese restaurants.
i am so into this dish when i was still pregnant with my little girl...i was craving on it so badly that i had to call the siktang and buy two bowls of jjajang myun!now that iam not pregnant anymore, i still want it but this time, i want to cook and have my friends taste it coz im back home...
Question . . Do i HAVE to use Korean radish? Or is american radish fine?
MsMcLover1 1 hour ago
@MsMcLover1 no, you could use daikon or white radish.

@Maangchi o okay :D thanks i can't wait to make some :D

It is like a fortune cookies...they are available at every Chinese restaurant in the US but it is actually an US invention.
fcia 11 months ago
@fcia THis is in fact partly a chinese dish. It was made by Korean and Chinese mine workers back in the days when they had only black beans and noodles and the ingredients to make jjajangmyun and it was a hit! its not american invented in any way

@en3rgieboy
But it is still korean food though.
People call it chinese food because korean foods arent usually with myun and chinese foods are like that, and they make it in some chinese restaurants.

When I have this dish at a restaurant, I'd taste more sodium. Maybe due to MSG, but I'd definitely taste more salty flavor from the JaJang Sauce.
