  • To the people wondering about the cloth. That's pretty typical. What should he used instead? Paper towel? The cloth, the cutting board, the knife, and the fish itself are all clean. The cloth is not used to wipe tables or anything else, the cutting board is not used to cut other stuff. It does not make anything dirtier.

  • I agree with Luritap - what is the purpose of that little towel? He is "cleaning" around and putting the towel all over the fish. Can't clean something and touch the clean with the dirty

  • how do you know its a dirty cloth? id say its most probably clean along with his hands and wat not. id say the reason hes wiping the fish is so he can hold it so he can cut it without it slipping all over the place.

  • do you know how to find the salmon belly, known as fatty salmon and salmon toro?

  • its the part of the salmon that is right where you cut it open to gut it.. ie,, It's belly... lots of fat and has a silver skin attached to it. ..

  • I think the tweezers were too narrow. The proper ones were very broad, as seen on Food TV

  • i am a chef in japan, and i used to cut salmon when i was workin in new zealand,

    i am pretty sure, the man on this video is using wrong knife, and the way he fillets the salmon is way too crap and its wrong. he should buy a proper knife called `deba` and he should learn it properly.

  • hey, i owned a deba knife, just as i owned a yanagi and usuba knives. they're all stainless steel knives, i ordered them online. i used a deba knife to fillet fish.

  • What the heck was that? You left the skin on? I was taught to fabricate and debone a salmon in about 2mins. It took you 5 and you didnt even finish it.
