The reason why the title of this video uses 'archeology' instead of 'archaeology' or 'archæology' is the same reason why Latin is so difficult. Languages change, usually they become less complex and thus easier.
It could be noted that under strict British English spelling only 'archaeology' is correct. 'archeology' is simply not yet accepted as official spelling and the English language no longer has 'æ'

Making easier spellings and less complicated grammar acceptable and later accepted is part of language too.

The word has undergone some change and has lost its ash because the use of "ae" to represent the dipthong is technically incorrect. This causes the two common forms of the word: Archaeology and Archeology; with the latter replacing æ for e.
This is the same case with many words: hæmoglobin, encyclopædia, and many others.
