one thing im confused about is that he doesn't use a crepe. I've always been told to use a pancake to stop thje pastry from going soggy. Is this necessary?
Shame he skips out on the video on the most important part, rolling the ham and mushroom onto the beef. That gave me no end of problems, still didn't figure it out!
Lay your ham out on top of the glad/cling wrap, using a scraper, add a light coating of the mushrooms in a consistent layer, place your beef at one end of your ham and mushroom layer, pull the cling wrap up and use it to roll the ham around the fillet
If you want to do a large one, then use normal pastry, not puff, I found this to work a treat, also use kind you roll yourself and use flour, that way it won't stick to your hands like the pre rolled puff does.
Don't make a larger one, your pastry will end up overcooking, and always use puff pastry, gives that texture that will never be able to be accomplished by any other pastry. Not using puff pastry on a wellington is like not using flour to make bread, you will have a bad experience and end up not liking wellingtons, try it how its supposed to be made with puff and with half kilo fillet
Here's a couple of tips I've picked up while cooking these, the beef he's using is about 400g if I mind right, it's only big enough for 2 people, he says cut it thick, but after 1 cut, what's left does not fill into the rest of that pastry, I'd say 4 bits from that piece.........so I tried to make it bigger......big mistake!........for an 800g version, it takes too long in the oven and the pastry ends up like filo, tastes amazing, but the presentation is just not the same.
They are not supposed to be bigger than the one he made, otherwise the pasty will overcook and start burning, any smaller and you will have raw pastry, why don't you trying making more then 1 wellington >.>

you shoulnd't cook it for any longer than 30 to 35 minutes for a 3 pound wellington - if you want it medium rare - rare which is what ramsay did.

It's not an easy dish to make if they ask for it 'well done'. You have to make sure you don't burn the pastry.

You use the plastic wrap to aid in turning the ham and mushrooms around the tenderloin. Just think of rolling sushi.

He cooked the beef perfectly but this is not Beef Wellington. Traditional Wellington does not use ham or mustard, it uses pate.
