Keep some good cars and adding lots more cars, more races, add some cops, new area for the map, like for ex: bridge leading to another part of a city. And instead of it being all the time during the night, make it during morning. More rain, fog, snow. Make it random. ETC... This will take me much more time to write everything in my mind down.
