Hi Aussi Griller, to prevent browning of guacamole as i am mexican i can help you all. use lemon juice fresh, and whenthe mole is done put the avacado seed in it!
Dynamite recipe! Thanks! Tried it earlier this week but the avacados weren't ripe so it wasn't great. Tried it again tonight and it was PERFECT! Thanks! Best guacamole I've had since I was in Mexico! Gonna try your salsa now with my remaining half-onion and half-lime!
Nice guac. I would sub margarita salt for table salt. I was told the acid from the lime is what keeps it from browning, I've never heard of stone being a preservative [and I've lived at the border of Tijuana for most of my life]. I believe you can extend the life of your guac with nitrates, but I've found they make the guac taste foul. I just prepare it moments before eating. No worries about browning there!
@AussieGriller It's true! Leaving the stone in makes the avocado think it's still an avocado and not guacamole. This is a good trick for dinner parties so that the guacamole doesn't go bad before the guests arrive, or if it's going to be out for a while! Great video!
@AussieGriller A beautiful guacamole of yours, dude. Please:could you give me the permission to use a photo of your guacamole at 1:53 on a recipe contest here in brazil?I need an authorized picture to participate and i think that a photo of your guaca would be really awesome.
Awesome. Another one similar to mine but we all make similar stuff. You put more stuff in though. I use lemon juice instead of lime juice & not salt or pepper. Mine would be a bit bland compared to yours but i find with mine the lemon juice gives it a kick.

It will tend to start discolouring after a few hours. I've heard putting the stone into the guac can help to prevent this
AussieGriller 1 year ago
@AussieGriller This can be prevented in two ways: One is to leave one avocado seed in the sauce The other is to squirt lemon juice in the mixture

How long does guacamole last in the fridge? I made this but the surface gets dark while inside looks still green.
