I like to remove skin and cut real thin also flour and egg no bread crumbs i fry it low heat slowly let it sit over night eat at room temp in a sandwich
I bake my eggplant also...but i put oil in the pan first so it tastes a little like fried eggplant parmesan.....sometimes I sprinkle a little on top also when i turn them over in the very hot oven..thanks
I'd respectfully add 2 suggestions, if u don't mind.
1- If u have a chance, type the ingredients, listing them in each video or at the end of it.
2- In this particular video, you started the recipe, but didn't tell the viewers "how to" or "how did" you incorporated those into your dish.
However, this minor detail was fixed in the "Biscotti with Almonds" video, where you well explained each steps and showed the audience everything you did in it.
aw, shucks! i would love to have seen it cut into, showing the layers and all. but i really like the idea of baking instead of frying the eggplant before layering with sauce and cheeses, and baking again. not that i don't love the fried version, just that every calorie counts these days and i think we've become accostomed to healthier less-fat revisions of traditional dishes. will definitely give this dish a try. thanks!!
@AbottNCostello YOU SLICE, the eggplants and layer in a large pot with salt. When all done, put a soup dish on top, upside down with a heavy can resting on top and fill with water. Soak for 15-20 mins, then rinse very well to remove salt and DRY in a collander before continuing with the recipe. My dad always did this and his eggplant never had a 'bite' to it, it was delicious.
my parents always the eggplant (peel it optional) and then layered it in a large spagetti pot, salting each layer as you go, and then when all is sliced and layered, put water in the pot, a dish on top upside down, and a heavy can on top of the dish to weight it down. Do this for at least 15 - 20 mins. Then water will turn a brown purplish color...drain off the water. Rince each piece thoroughly to remove the salt and put in a strainer to DRY.
Videoqueen45, Thank you soooo much, I tried it. And yes I did sweat the eggplant. I also baked mine after breading them. I think your recepie was my favorite because you didn't fry them. It was much healthier. I absolutely loved it. I now have a new dish to make for my friends and family members. Thanks for posting this. May you please show me other ways to prepare eggplant? Thanks
@NostalgicNatasha yes, you can sweat the eggplant, but I don't too, I like the tangy taste that it gives when you don't. you can try it both ways, its really a matter of taste. good luck!
It's 8am and you've made me hungry for eggplant parmesan. I guess I'll have to let go of the coffee mug and make a trip to the grocery. Love your videos!!!

Whats the sauce? Just tomato soup? just wondering cause thats what it looks like and im hoping because that would be simplest :)
GardenNewbie 2 months ago
@GardenNewbie Of course homemade sauce is best, but when you don't have time, reach for the jarred sauce. Thanks for the comment. Giuseppe

soaking the layered eggplant with salt and water and then rinsing and drying will remove any 'bite' or bitterness taste before cooking.

Argh. Questa non è una parmigiana.
A parte che le melanzane non si impanano.
Si friggono e non si fanno al forno.
La mozzarella non si frulla.
Manca l'uovo sbattuto sull'ultimo strato.
