If you notice every other Arrancar's resurreccion, and look at their flashbacks, you'll see that the animal parts are shared. Grimmjow looks like a panther when he releases Pantera, while Harribel looks like a shark after releasing Tiburon (meaning "shark"). So, Ulquiorra, since his zanpakuto was Murcielago (meaning "bat"), and his released form resembles it...

Right, since so many are asking: Gin's eyes are officialy LIGHT BLUE. The reason they were depicted as red, then yellow previously was because no one knew their actual colour at the time. He had opened his eyes in the manga, but the panels are in black and white so it was hard to tell. We only discovered his true eye colour when he appeared on the (coloured) manga cover, waaaaaaaayyyyyyy later.

Manga's in black and white, so when he opened his eyes for the first time we couldn't tell what colour they were. When they reached that part in the anime they decided to make them red, even though no one knew as it had not been officially established yet. During one of the end credits several episodes later they were depicted as yellow. Finally, Gin was pictured (in colour) on the cover of the manga and it was revealed that his eyes are in fact light blue.
