Wine is aged in oak barrels to put tannins into it. A handful of acorns once in awhile shouldn't hurt you. The amount of tannin depends on the acorn as well. Burr Oak acorns are sweet and you can eat them just like they are without leaching out the tannins. Probably wouldn't want to eat too many like that though.

UNLESS you have a food allergy to tree nuts, you've been misinformed. Acorns are generally safe to eat, and were a staple of many Native peoples. There is a large quantity of tannin (tannic acid) in the acorns--particuarly the black and red oaks--but that can be removed by boiling or leaching. the white oaks tend to have tannin levels low enough to be consumed w/out prep.
Tannin is only toxic in very large quantities, where it inhibits the absorption of certain minerals like iron, which over time can result in anemia. Now, that sounds bad, but chances are you would never ingest tannin in that quantities--it's very astringent. So unless you plan on eating pounds of raw acorns for days on end, you'll be fine.
many common foods contain tannin, some in considerable quantities: black tea, green tea, cranberries, pomegranate, beans, chocolate, and other raw nuts.
I have recently did research into the subject and discovered the same information you mentioned. Interesting to say the least. I have even found many recipes for use with acorn flour and how to make such a flour and as to which part of the acorn to use.

However, the nuts of white oak are sweet and can be eaten right out of the shell, if the squirrells don't get to them first (I've tried them--very tasty). White oak acorns are easily distinguished from black and red by their rounded lobes.
Acorn Pancake Recipe: 2 1/4 cups white flour 3/4 cup acorn meal 3 1/2 tsp baking powder 2 tsp salt 3 tbsp sugar 1/2 cup dried cranberries 2 beaten eggs 1 tbsp melted butter 1 1/4 cup milk 1/3 cup applesauce 3/4 tsp vanilla mix these ingredients to combine and then cook them in a hot frying/grill pan until they are nice and brown.

No it does not, but in the film this is taken from this is all explained, this is an emergency drink whilst caught out in the wilds so the phsycology of the hot drink is far more important than the tannins from a very small ammount of acorns

You can leech the tannins out of the acorns, either by boiling and changing the water until it boils clear or by putting them into an open weave bag and dumping in a stream for about 12-24 hours.
My nanna used to make acorn bread and used to do the boiling method for small amounts and the stream at the bottom of the garden in autumn was filled with sacks of acorns.
