Sherri, you might want to get you a pestal and mortar or maybe a coffee grinder. I would bruise the leaves before adding into your jar. It just helps the oils release better. I am with you on not liking the alcohol either. I bet this will turn out just as good. let us know how it tastes LOL. Yummy.
You could make a flavored oil as well for cooking it would be yummy! :)

You can use the leftover stems to skewer food imparting flavor for: eggplant, tomato, tofu ~ go botanical and organic ~
