A correction: Not the entirety of Christendom attended the 7th ecumenical council. In fact the Oriental Orthodox who at the time commanded a large minority (possibly up to 20%) of Christian adherents did not attend Chalcedon (4th council) and beyond. In addition, the Oriental Orthodox Christians did not experience Iconoclastic tremors. One can only speculate what would have become of the Greek Orthodox Church was it not for Zoe and Theodora's views on icons
