Very happy with this recipe! I picked the recipe for its simplicity and method of cooking. I liked the fact that there was no need to go through a lenghty process of grinding spices and making a paste. This is not the correct recipe of Hyderabadi Biryani. I'm a hyderabadi and we dont add javetri, pepper corns, kala jeera, corriander and cumin pwdr,etc to the marinade(yakhni in urdu)...lemon, v little quantity of milk is added to the biryani as well....green chillies should be whole....small things make a big difference in the Biryani flavor.

@sairam272011 Try putting the cooking pot over a thick pan(tawa) and then put it in low heat for about 45 mins(it takes longer). Comes out perfect everytime
hello vanchef. i tried out this biriyani. it was overall good but what i foound after removing the biriyani from tandoor was that the lower chicken layer was burnt and max of the oil got concentrated in that area. plz help

Hey vahchef thts so gr8 biryani...i tried it and it came out yummmmmmmmmm .......but i din know which yogurt to put i mean thick or watery....as i used 2 cups thick yogurt for this recipe the yogurt was all remaining in the chciken even after dum.....and my husband liked the whole dish except one thing that is chicken which was covered with small small pieces of curd and it was tasting slightly curdy curdy........help me vahchef!!!

@hypnotizerful ...most of the professional chef's do...they wash their hands often and are very particular about hygiene standards...washing hands with soap and water is quite sufficient.... the idea gloves/spoons being a 'must' to be considered hygienic has been propagated by mostly fast food chains where they sell their food as being hygienic & 'healthy'

Sanjay, I have been watchin yr videos since two years. You are far better than Sanjeev Kapoor. Most of Sanjeev Kapoor's recipes go wrong as he does not teach the fine techniques of cooking as u do. Just made this one today... very nice. The mace and mint added a distinct flavour. However, would anyone have any tips on how to stop the yogurt curdling? It's a problem I never seem to be able to surmount. Thankfully the yogurt cooked down nicely in the biryani, but I did notice a bit of curdled yogurt clinging to some of the chicken pieces.
My mom always makes it but I never dare to try it!!!!

I have hot plates instead of burners which take time to increase and decrease heat, how do i control the heat in the last process?? I have only one big enough hot plate for cooking biryani type dishes
@Gh4LVr I reckon you could; it would give a very tasty flavour (use far less though!). However the taste is nothing the same. Mace is quite a non-descript taste whereas nutmeg is definitely a taste all of it's own! You may lose authenticity but it would still definitely be tasty. I think half a teaspoon would be enough. It worked just fine for me. It wasn't the best Biryani I ever had but it I think that was due to absence of saffron and it can be improvised.
As a feedback, this 'how to' was really neatly done and you have actually made it look a lot easier. You may quantify things a bit to easily determine servings. Also, I would oil the pan before layering chicken and rice so it wont stick as pointed out by abialafoka.

I couldn't procure mace, mint and saffron.
I used nutmeg powder instead of mace. Several other spices I got from a pack of whole garam masala from the Indian store. Microwaved the basmati rice for 10 mnts. (2 mnts. after boiling). One minute after boiling should suffice.
That was my first india food recipe, and it was horrible :( I don't know why :( I use big pot and chicken was stick to the bottom, and taste it wasn't good :( I feel very strong bad flavour, i think maybe it because cloves, smell in my opinion really bad. @Moonlightrealgirl I just went with 3 pounds of meat and one tea spoon of spices. I added more spice till it smelled like the dish I get at the restaurant, but no more than two tea spoons. And very little turmeric, it's very bitter. It came out great.
May be this will help all those that are burning their biryani's. Marinate the chicken as illustrated by Sanjay. The rice can be cooked to 80-90% in the normal rice cooker and then sprinkled onto the chicken. Bake this in the oven at 325F for about an 1Hr 15minutes to an 1hr 30minutes. The chicken will be cooked very tenderly and the rise won't burn. The key to making a biry;ani with crisp rice is that the rice should be dry. This works for me every single time i cook biryani. Hope this helps:)
What if you don't have saffron? It's hard to find saffron where I live...anything to substitute it with? Is it only for color or for flavor also? A friend of mine said he uses turmeric instead, is that a bad idea?
@syllirabbit Do not use turmeric, as it has a slightly bitter aftertaste if not used in minimal amounts.
Saffron is superexpensive and is used primarily for colour- the delicate flavours of saffron is not captured in the minuscule amounts that it is used in most of the modern versions of the biryani. Especially, Hyderabadi biryani is loud and spiceladen, so the saffron is a little lost in the rush.
The easy way out is to use a drop of food dye, tactically.

Sanjay, I have been watchin yr videos since two years. You are far better than Sanjeev Kapoor. Most of Sanjeev Kapoor's recipes go wrong as he does not teach the fine techniques of cooking as u do. Just made this one today... very nice. The mace and mint added a distinct flavour. However, would anyone have any tips on how to stop the yogurt curdling? It's a problem I never seem to be able to surmount. Thankfully the yogurt cooked down nicely in the biryani, but I did notice a bit of curdled yogurt clinging to some of the chicken pieces.

@teluguhasyam Use less water. Wash rice several times under cold water to get rid of outside starch.

@Gh4LVr I reckon you could; it would give a very tasty flavour (use far less though!). However the taste is nothing the same. Mace is quite a non-descript taste whereas nutmeg is definitely a taste all of it's own! You may lose authenticity but it would still definitely be tasty. I think half a teaspoon would be enough. Hope that helps x

It worked just fine for me. It wasn't the best Biryani I ever had but it I think that was due to absence of saffron and it can be improvised.
As a feedback, this 'how to' was really neatly done and you have actually made it look a lot easier. You may quantify things a bit to easily determine servings. Also, I would oil the pan before layering chicken and rice so it wont stick as pointed out by abialafoka.

I couldn't procure mace, mint and saffron.
I used nutmeg powder instead of mace. Several other spices I got from a pack of whole garam masala from the Indian store. Microwaved the basmati rice for 10 mnts. (2 mnts. after boiling). One minute after boiling should suffice.

That was my first india food recipe, and it was horrible :( I don't know why :( I use big pot and chicken was stick to the bottom, and taste it wasn't good :( I feel very strong bad flavour, i think maybe it because cloves, smell in my opinion really bad. I ate before in indian restaurant that food, and was something amazing, that i want to make this in home. anyway On your video look very nice

@Moonlightrealgirl I just went with 3 pounds of meat and one tea spoon of spices. I added more spice till it smelled like the dish I get at the restaurant, but no more than two tea spoons. And very little turmeric, it's very bitter. It came out great.

May be this will help all those that are burning their biryani's. Marinate the chicken as illustrated by Sanjay. The rice can be cooked to 80-90% in the normal rice cooker and then sprinkled onto the chicken. Bake this in the oven at 325F for about an 1Hr 15minutes to an 1hr 30minutes. The chicken will be cooked very tenderly and the rise won't burn. The key to making a biry;ani with crisp rice is that the rice should be dry. This works for me every single time i cook biryani. Hope this helps:)

What if you don't have saffron? It's hard to find saffron where I live...anything to substitute it with? Is it only for color or for flavor also? A friend of mine said he uses turmeric instead, is that a bad idea?

@syllirabbit Do not use turmeric, as it has a slightly bitter aftertaste if not used in minimal amounts.
Saffron is superexpensive and is used primarily for colour- the delicate flavours of saffron is not captured in the minuscule amounts that it is used in most of the modern versions of the biryani. Especially, Hyderabadi biryani is loud and spiceladen, so the saffron is a little lost in the rush.
The easy way out is to use a drop of food dye, tactically.

i have a tip to share .i saw some comments where they wrote that there biryani burnt coz of wrong estimation regarding rice.
there is a very simple method of making the rice half cooked. for example
if u take 2 bowl of rice u usually add double the amt of water i.e. 4 bowl
for this biryani instead of adding 4 bowl of water add 2 bowl of water
i.e. for 2 cups of rice add 2 cups of water :)))))))))
