@fistratedfisher - Hi, with the mangos, they are crisp when dehydration is completed. Most of the fruit I dehydrate come out as crispy. If your fruit is leathery, you may need to dehydrate it longer. Thank you for watching!
@efooddehydrator what is the average shelf life if it is "leathery" and vacuum sealed? i just started dehydrating, but i prefer fruits a bit "leathery" vs. crispy.

How do you know when they are done in the dehydrator? Is it the same as other fruits and are finished when they are like "leather"?

That's very common in the Philippines. Most of them are made from Cebu and the biggest p[roduct maker of dried magoes
