They have something like that, it's called 'chainmail'. The idea is interlocking rings of metal catch the blade and instead of you being stabbed or cut, you get bruised or maybe a bruised/broken bone but you weren't impaled or sliced wide open. Take that and back it with 1-2 layers of more chain mail and you can stop a spear from being driven into you by some one on a horse... you'll just have blunt trauma instead.

But something like carbon steel, which has a tensile strength of .84 GPa (122,000 psi) and a yield strength of .64 GPa (67,000 psi) your' knives will break against one layer of it before they cut through. That is, unless you're using a diamond-edged knife.
