  • @b1rdkeeper BBQ really gives a good flavor to meat without adding too many spices, keeping it pretty healthy. So yes as long as you don't use a lot of seasoning or sauce you can eat off the charcoal grill every day.

  • put gross salt on the and of the cooking, is better, is more juicy because the meat take only the salt that wants, the best steaks stay 20 days in the fridge of the meat shop, is better because in 20 days the meat stay in relax and become more soft, the best wood for cooking is the olive three, this is how we make in italy, ciao

  • @davorinize This is called dry aging. it doesn't just stay in the fridge 20 days. huge chunks of meat are hung to dry in a controlled fridge (about 2 celsius) for 20-28 days. the outside will get harder and drier, but the inside will get softer and the flavor more robust. most of the steaks you see in the american stores have already been wet aged, which means they have been put in a bag with all the air removed and put in the fridge for a few days.

  • Actually, searing does not hold juices as much as say, oven roasting, but the loss of juice is minimal and searing it makes it taste MUCH better.

  • @pj5070 interesting comment, but it fails because adding salt an hour before searing the steak will only bleed the meat of its tasty juices. Adding coarse salt and some fresh ground black pepper just before grilling will produce that layer of texture and beef flavor that steak masters require.
