  • I saw some mods and drilled some holes for ventilation but you are right about the ash... It makes a ton but I decided to be a purist =) Got about 4 more hours to go!

  • @airtexaco This model Brinkman will require a bit more attention during the cooking process. Since the bottom is wide open (as you probably already know) it gets rather difficult to maintain & control a constant temp. Also, the charcoal will settle into it's own ash and might need a bit of attention as well. But all in all, it's not a bad smoker for the price.

  • Hey hernanx3,

    That water pan creates a light steam, keeping everything moist! I've had a lot of trouble with this Brinkman. Found a great little attachment for my Weber, that basically does the same thing! It's called a "smokenator". We did a video about it on my other channel, "SmokeyGoodness".

  • The Brinkman is a good smoker only if it is modded. The main problem is the charcoal tray. When the charcoal burns, the ashes have nowhere to go and this in turns makes the temps very unstable. I used the "brinkman smoker mod" and now I use 50% less charcoal and have solid temps through-out smoking. Essentially your adding a grate 1.5 inches from the bottom of the charcoal pan for the coal to sit on. This gives the ash somehwere to go during burning.

  • Thanks for the advice prOn3! I guess I didn't realize there was a mod for it! But, you're right, after about 90 minutes, the temps start to fall off, and it's a real struggle to maintain even 275! I will look for the mod. lately, I've been using the Brinkman only for steaks! We had a wind event here 2 weeks ago, which damaged it, but I think I can repair it.

  • brinkmansmokermods(dot)com is a good site for the mod. I know exactly how frustrating it could be to use the smoker without the mod. I actually got lucky and got mine for free since a friend didnt want it anymore :D. Good luck on the repair and happy bbq'ing.

  • No, he got the smoker from another friend of ours and they both are lazy. When I got it, it wasnt even put together(it was laying around their houses for 2 yrs and was starting to rust). Also as far as mods go, there are other sites that show you how to add vents that open and close to control temps better. I'm sure you can google those under "brinkman smoker mods".

  • I understand that! Since the bottom is wide open, I'd like to add a vent in the lid, and (something I already do) stuff tin foil around the lid, because it doesn't seal at all. Hmmm, this is becoming a DIY project! One thing I love about the Brinkman, is the water pan! I almost never have to add water.
