The Everfree Forest would have definitely died out except for fungus in the short term, and everything living in it would have fled to the magic lands around it or died. Maybe mushrooms would replace apples as a primary food source. Every day would be a winter wrap-up. But yeah, ponies could find a way. Life would just be harder. And darker.

This video is a little vague sometimes on who the speaker is. Celestia is lip synched and clearly Twilight is the Caroline that replaced Luna, but there's a lot of scenes that seem to follow Nightmare more. It could have been helped if you used other episodes with Celestia.
