There is no button for kicking it AT people, you just have to kick your board away (i think its the triangle button on PS3) and hope it hits someone. You can try to aim it and hit someone on purpose, but its crazy hard.

Not sure about PS3, but in Xbox360 version you just have to press a and b and release them to jump. It is the same with PS3 (both foot buttons.)

hippy jump on 360 is x+a hold them to set how high u want to jump. If u just want to kick ur board out then its y. for ps3 use the corresponding buttons

when you ollie hold LT or RT and flick

While in the air hold the grab key (one of them). I play on the 360, so for me it's LT/RT. So in mid air you hold one of them then you do a kickflip with the thumbstick, or do any kind the tricklist is endless (well really vast but yea you get it).
