@BKSinAZ Kneading is what you do in the beginning to get the ingredients mixed and get the gluten development started. Folding is a more gentle process, comes later after a rise or two, and is used to both equalize the dough temperature and strengthen the dough.

I figure out the recipe in weight instead of volume. If you don't have a kitchen scale, you can find pretty cheap ones (around $20) that will work fine. It'll help make your baking more consistent.

Is it better to mix the dough with your hands or a wooden spoon? Because you did both in the video. Or does it matter at a particular step?
