The reason why people like Vegeta is because he is more "human" than the rest of the characters.

People are good and bad. We all do good things and bad things. We have good thoughts and bad thoughts. We get angry. We want more. We want success. We are sometimes selfish. We care. We do wrong, we try to rectify our mistakes. We change over time. Vegeta empathizes these things all through the show.

I can relate to Vegeta more than most characters, because he actually acts like a human.

I think Vegeta is a far better character than the rest of the DBZ cast- a lot more depth and room for change (he goes from the villain to a reliable ally by the end, while Goku remains exactly the same in terms of personality). He's a lot more dynamic, and easier to identify with. We all have those demons and disappointments and frustrations. Sure, he usually falls behind Goku a bit in power, but he gives his all at ALL times, which is respectable (a lot more than Goku being handed power).
