Ulquiorras broken mask is shaped as a vastro lorde, so i guess its possible that he is an adjuchas still...not likely tho, seeing as grimmjow was one and look how strong he was compared to ichigo. besides, we already knew aizen had vastro lorde so it would be ogical to turn them into arrancar.
Aaroniero ate the hollow that merged with Kaien, meaning he technically ate Kaien. Since Aaroniero's power lets him mimic the appearence/memories/powers of whoever/whatever he's eaten, he mimicked Kaien in order to make it more difficult for Rukia to battle him.
