I was just wondering. Do you find out how to play these songs by listening to the music itself, or do you just use sheet music?

Sheet Music is helpful in giving you the correct timing and chords. it's just easier to learn the song. Having said that, most sheet music is basic and needs embellishments.

Once you know how it goes , you can improvise and arrange it the way you feel.. Just as in telling a story, there are many ways and styles to do it..

Song highs should be played a bit more emotionally (more loudness), and it will be absolutelly perfect. Though you play it really good.
