Volgin is vastly superior to snake physically and the boss is superior to snake in terms of expertise, I think if the boss hadn't arrived then snake would have easily beaten volgin due to his CQC, however, I think that he became delirious after the first punch volgin threw, due to the force of it and those punches just kept him in that state unable to recover.
