Hank heard this tune on tour in Louisiana and liked it. Hell, he liked all the cajun music he heard down there. He wanted to do some and just made up some lyrics using Grand Texas, lyrics he thought sounded cajun to him. I'm a big fan of Jambalaya, and this sounds pretty nice to me too.
