To be real the skins of the dumplings are NOT so "delicate" where they'd break if NOT being "so gentle".
That plus "Xiao Long Boa" has been around.... oh like probably decades/centuries and is WELL known to the Chinese but now is "all the rage" BECAUSE THEY'VE BEEN "DISCOVERED" BY "ANGLOS".
Actually kinda pathetic that something "is a discovery" ONLY when the "anglos" have "found it"?

The best Soup Dumplings are in 1 store in Shanghai, it has a line that goes for about 3/4 of 1 block. And that store ONLY sells Soup Dumpings
