Garlic in oil (stored at room temp.) can produce harmful toxins (although people do it). It should be stored in the refrigerator and only for a day or two. I chop up garlic, add to olive oil and heat to infuse the flavour(not always, but most of the time), then use in salads shortly after it has cooled... cheers!
It begins to work instantly but yes, the longer it sits the more the flavour. With this batch here, just grease the pan with it and cook up those meat/ veggies! Thank you as always, have a great day 'chpen'! KtC

Add a little bit of vinager and it will keep for years.
