Music theory just shows you many ways how a piece could sound. Ways you may also would explore if you wouldn't got the knowledge. But with it, you got it faster.
But in my opinion, at least it isn't important where someone studied or how much he knows, it's how you use it. And the hardest thing in music is probably write a good melody. Although in a film your music is a very important component.
Where music theory is needed is in improvisations. There you need some knowledge and experience.

You can come up with a mediocre melody,and that's it if you don't know anything else. But an able orchestrator can arrange it for an orchestra and sound brilliant.

I thought he could write for an orchestra. But he can't ,he does not have that kind of training. Someone else does that job for him,and that's a big difference with someone like John Williams or Jerry Goldsmith. In my opinion,a COMPOSER is the guy that writes everything,from the melody to the counterpoint to the orchestra parts. Zimmer doesn't do that. I'm not saying that's bad or good.
I won't argue at all that Hans Zimmer is able to write good film music, but from the point of view of music theory, his statements here are very questionable.
For example: A Fmaj7 of course contains all notes of F and Am, but neither from what you hear nor historically these are superimposed, "polytonal" chords. His statement is even worse given the fact that these chord extensions are just used as simple, plain figurations here. Simply put, he makes things far more complicated than they are.

'His' music is great,but the truth is, most of it is arranged and orchestrated by professional composers (I believe her name is Lisa Gerard? ). That adds a ton of quality,and in my opinion that quality is more powerful than his ideas. I mean,if you hear what he played on piano in this video,is very average

Okay, please correct me on this as my compositional skills are very rudimentary, but how is an F6 chord also a DM chord? The C in the F6 has no place in the DM? Unless he's referring to an D7th?
musically it is almost the same as a Dm. Actually its more likely to be like F6 = Dm7 cause F6 has a C which can be found in Dm7 and Dm7 has a D which can be found in F6. Infact, Zimmer is almost like playin F6/A.
