You make a small cut on the shell so as to allow the steam pressure to escape, otherwhise the chestnuts would explode and you would be left with a mess and very little or nothing to eat, plus you can suffer some light burns too.
Yes,you've to cut the skin and after,when the chestnuts are roasted,put it into a large napkin and wet all with red wine, close all into the napkin and rub all for 2 minutes and then eat.

no oil but yes the skins are cut with a knife before hand so that they do not explode in the fire
