I love this video. Thank you. One question I have is what do you do to make 100% whole wheat sourdough??? I have found many recipes, but am still looking for something that works well for me.
@gardenwife I do both these days. If I'm going to be in the house, I'll usually do stretch and fold. But if I'm going to be away for whatever reason while it's rising, I'll just knead it the traditional way.
I can't get a good handle on stretch and fold. Some time, I hope to find someone who's good at the technique to show me first-hand. I watch the videos and try to follow the instructions, but it never rises well for me. The same recipes, done with my stand mixer kneading, rise just fine so I know it's me not doing the S&F right. LOL

@conviviumman Typically an 1.5 to 2.5 hours, depending on how chilly the house is. Colder = longer.

@holcombsv If you visit The Fresh Loaf, look in the handbook and then look at the recipes, you'll find the recipe I use most often.

water in the oven...ok, I sure hope your oven is clean, I'm sure you like that old grease and burnt flavor in your bread. haha

A serrated knife works even better. And, so long as you keep the water in the cast iron pan, there won't be any grease or burnt flavor, I promise.
And, yes, I do keep my oven clean!

oh! I didn't hear you mention using a cast iron pan in the oven. I thought you just threw it in over the elements and bottom. That makes more sense!

@fetymann Yeah, putting hot water directly on the hot element is a good way to break your oven. I've got friends who've had to buy a new element.
