  • Hi!!! I´m trying to make new things for my kids but I don´t know what happened the batter turn out creamy and OILY is it normal????

Where we live it´s very dificult to get gluten free snacks so i´ll try to make them but it didn´t turn out really good. The only changes I made it was that I used rice flour and rice milk the rest was the same.....can you help me????

  • @kikona2010

I am sure I can help you. It may take a bit of back and forth however. How did the baked good turn out? What was the consistency. Did you use all rice flour or did you mix rice flour with another gluten-free flour? Do you have an oven thermometer in your oven? Most ovens, in my experience, are off by about 25 to 40 degrees, which can make a big difference in the outcome of a baked product. I am out of characters to reply to this post, so I will post a 2nd comment. Love, Lisa Lundy

From the Author, Lisa A. Lundy - continuation of my previous post:

If you used convection bake in your oven, I would recommend turning this OFF. For some reason convection bake does not work although I do not know why. If you are going to make this again, use 1/2 rice flour and 1/2 some other gluten-free flour. Also, hold back some of the liquid. No matter what - with a bit of tinkering, we will get you to be successful with your baking. Let me know how you make out. Love,

    Lisa

  • My brother is gluten and dairy intolerant. Thank you so much for this. You have helped so many people. God Bless You! xoxo

  • looks so good! :D

  • What is the texture of these baked goods?

  • Bake for 25 minutes or until done in a 350 degree oven. Use an oven thermometer to make sure your oven is at 350 degrees to ensure best baking. Most ovens (even new ones) are off by 25 or more degrees. Good luck.

  • How long do the different things bake?

  • can you please put recipes in the details section in the future.

can't wait to try recipe :-)

  • One more thing. In the first video you said 3 teaspoons Xanthum gum. The second you said with a tablespoon Xanthum gum. Please clarify. I hate to pick but I want to try these asap.

  • 3 teaspoons and one tablespoon is the same measerment.

  • You're terrific. I can't wait to try these. Thanks.

  • WOW!! Thank you SO MUCH for your two videos!!! I am so excited to be able to make yummy foods for my kids! I am looking into getting your book. The video REALLY helps see HOW things are to be done!! :) And you were so nice to share such an awesome recipe!! And ou didn't even promote your book once, so I am gonna do it for you!! :)

  • Thank you for your generous and kind words! I am so glad that you found them helpful! I really am dedicated to empowering those people struggling with food, so I thought free downloadable videos would be a huge help to many! Good luck, and let me know how I can help you!

  • Did I miss what temperature you are cooking everything at? I know you said 25 minutes cooking time.

  • Probably not! The baking temperature for a regular oven is 350 degrees. I also strongly recommend an oven thermometer to verify the actual temp. of your oven as in my experience most ovens are off by an average of at least 25 degrees and this will make a huge difference in how your baked goods come out! You can get on at most kitchen departments of discount stores, any specialty kitchen store and many other places. Happy baking! Let me know if you need any other help!

  • How much xantham gum was that? First video you said 1 tsp. This time you said 1 tbsp.

  • Hi! The recipe calls for 1 tablespoon of xantham gum. Thanks for pointing that out. The next time I have a video camera I'll re-make this one and correct my mistake. Thanks a million. If I can help you out in any other way, you can e-mail me directly through my cookbook website. Best to you in your baking endeavors.

    Love,

    Lisa

  • It'd be a good idea because you completely change the recipe actually from the first video to second...

  • thank you !

my friend's little sister can't have gluten, so this was a big help .
