I have heard "carbonara" was first made in 1945 when there were american troops in Italy. Americans would go to taverns in Rome and would ask for bacon, eggs and nooodles, the typical food they knew. A cook combined them together using guanciale, spaghetti and eggs and that's how spaghetti alla carbonara was born. So they're derived from american bacon and eggs, according to this version of the history of the dish.
Nice! I've been craving carbonara--here in Japan it's difficult to get bacon, or pancetta without spending an arm and a leg. I'm going back out to find some...and I'm gonna have a blast making it. Thanks.
Looks good I am going to try it w/ turkey bacon, hubby won't eat red meat anymore, I'll let you know how it comes. I'll say a prayer for your grandmother, Deb. Have a Merry Christmas and a Happy and Healthy new year.

@OvoPiano The other theory is that the dish was created by italian cole miners (carbon) who would sprinkle squid ink into the dish to turn it black.

Great Awesome Recipe.
I love your cooking!
You use my favorite brand of pasta... Barilla.
Last year I didn't eat for 3 weeks and was very sick.
I was in the hospital for 2 weeks while they fed me through the veins with a pick line, I hope your Grandmother gets through this.
I love you both, damn your both so sexy!
