You are not supposed to put the "mountains" in the middle for every type of shot, the histogram just tells you how much of each tone you have captured in the shot, it's not a measure of propper exposure and it's not to be trusted. My display is kind of contrasty so I know if I got it in there, I got it in the file.
Nice tutorial.not to be a hater but Is it just me or does the third photo looks flat,even though the histogram is reading correct exposure,I personally prefer the slightly clipped black(1st photo)

@bogzny10 There is no science and I don't even know why he suggested f/16. You simply increase your shutter speed to let less light in so you can pick bigger aperture to blow up the back ground for your portrait work. What if you want really shallow depth of field? f/16 is not going to give you that.
@PhotographersOnUTube Yes there is, the rule implies a certain exposure value (around 15EV @ ISO100) for a known lighting condition. It is assumed that the sun's illuminance without clouds or dust around midday is somewhat constant at the photographing site (this wouldn't work at the poles). This serves as a memory aid for setting whaterver shutter/aperture values you want, specially when you don't have a photometer.
Thanks! If you look over to the right you'll see that I was using an off camera flash. I was triggering it with a wireless transmitter that was mounted on my camera.

That's correct. I've now upgraded to PocketWizards, but I rocked the V2's for a long time. Mine were actually pretty reliable.
