  • what about unbleached flour?

  • His crust recipe is really different from another episode called crust never sleeps. He wasn't making meringue there though. Is that why? Does anyone who's seen that episode know?

  • hmm pies. just need a cup 'o joe, and look at these wonderful Douglas furs. *thumbs up*

  • @knightsintodreams Do you mean Douglas FIRS, as in the trees? Because I don't know what Douglas furs are. Are they fur coats made out of guys called Douglas? ;D

  • @QueenBoadicea poor douglas :c those bloody hunter's just run up with scissors and cut their beards off. how horrible

  • Hey Hat,

Thanks for the videos, but what is the system? I'm trying to watch the 2nd part of most of them and can't find them. The "up next" thing does not work.

  • LMAO! Limp biscit!

  • my favorite pie is pizza pie

  • Shhh...Pie!

  • I like the limp bizkit reference. :D

  • @diaverde09 i noticed that too

  • Limp bizket isn't a band anymore haha...I wonder if Fred Durst watches Good Eats...

  • he said limp bizket isnt JUST a band anymore.

  • lol That'd be pretty rad if he did...XD

  • "it's a very humbling experience, I do it a couple times a week"

  • how long do you think it took him to make the giant lemon merangue pie slice?

  • A few hours probably..

  • about... 3 mins??? He's superman, he can do ANYTHING

  • I would definitely use that as a bed. It looks comfy.

  • Alton is the COOLEST!!!!!

  • fer sure :)

    he is my fav

  • Lemon meringue pie is SO DELICIOUS i made this last week and i wasn't expecting it to be that good BUT IT WAS DELICIOUS.

  • Love Alton, love the show, but he's actually wrong on the construction of a cream pie. A proper cream pie is composed of a (should be standard) tender yet flaky crust, a custard filling, and whipped cream on top. What he is describing is, in fact, a meringue pie, so named for, again, its topping--the whipped egg white delight known as meringue. A "cream" pie without either topping is a custard pie.

  • And look at the crust, looks like limp bizkit's not just a band anymore. lol

  • alton is really awsome and funny, but that limpbisket remark was korny lol

  • alton is really awsome and funny, but that limpbisket remark was korny lol

  • If you don't have a food processor you can freeze the fat from the recipe and use a coarse grater to grate it into the flour. Just grate and toss lightly with your hands while adding the water until it comes together. It's the closest you'll get to the food processor technique and it always produces a tender flakey crust!

  • haha the fry some more chicken!

  • HE CAN!

  • he CAN make the best pie i love alton!!!

  • Yes He can I made this pie from this eipisode and it was....SO FREAKING GOOOD!!!! So. don't talk before think.

  • lol limp bizkit

  • Key lime pie is better than Lemon!

  • ditto that

  • Well I went out on a limb and tried out making a grapefruit pie. It turned out fairly well but the flavor was still very subtle.

  • I remade the Grapefruit pie and this time made sure i have a good flavored Grapefruit and it turned out much better this time. It actually tastes like something.

  • grapefruit pie... hmmm sounds yummy :D

  • Great idea! People give away grapefruit like they give away tomatoes in NJ. They are just getting ripe. Heck, it probably only takes 1 grapefruit.

  • It took me 2 grapefruits to get the juice needed to make the pie. You need only the zest from about 1/2 of one if the zest flavor is strong.

  • Thats a really good idea. I love izzie grapefruit soda, I wonder if I could make a pie that tasted like that?

  • I live in FL, and I was thinking of making making key lime meringue pie, b/c the key limes are cheap now. But my brother requested lemon meringue pie so I didn't. Key lime pie isn't made the same way at all. It has condensed milk - lemon meringue doesn't. They're entirely different.

  • @TheSoSoAgnostic

The fillings may have a different technique, but they should both have meringue, and neither should be in a graham crust, but in a great flaky pastry crust.

  • Ha, I love when he says 'Lemony fresh". Alton Brown is my hero. <3

  • My Grandmother used to make me lemon meringue pie for my birthday instead of cake! I have yet to find someone make a better pie than her. Lemon meringue will always be my fave!!

  • "fortunately limp bizkit is not a band anymore?!" wahahahaahahha! love it AB!

  • Woooo Hoo! Pennsylvania Dutch! Represent!... lol sorry bout that.

On another note, the dinner looks like the one in the egg files ep.

  • Is that the same diner shown in the egg files episode?

  • I've never had or even seen lard in my super market.

  • Sometimes I find it in the ethnic or latino section.

  • Thanks, I'll check.

  • I love lemon meringue pie. My mom actually makes her pie with a graham cracker crust but it tastes really good.

  • I prefer a Graham cracker crust for lemon pie because I can make it faster and it tastes good letting me spend more time making the payload perfect.

  • Gotta love Youtube's Thumbnail for this!

  • Mmm....lard. Nothing better for biscuits or fried chicken. I'll gladly give up five years in the nursing home for it.

  • Lard actually isn't quite as bad for you as you think, in fact pound for pound it has less saturated fat than butter! That is, if you get good lard...

  • I just can't help but think of "extremely fattening" when I hear the word "lard".

  • Blame Crisco! Their whole product was based off of being a "healthy" alternative to lard. Turns out that it's actually less healthy, but it stuck.
