All that the vanilla does is add flavour, it doesn't do anything in the "mechanical" process of baking. You can use, lemon, rum, cherry extracts, whatever you like. Vanilla is a nice mellow flavouring that doesn't overpower the other flavours in the baking.
The entire brownie is gone, didn't quite make 24hrs in this house, lol.
You could use self rising flour and leave out the salt and baking powder. There are conversion website out there that will tell you how much to use. I've never used self rising flour so I'm not really sure.
