You need to pass specific checkpoints. Type "grumble volcano glitch" in the search bar and watch the vid of Roliation, he explained it very well.

That shortcut never seems to work when I do it. If I try it from the start like they did, I hit the rock and don't make it up there. If I try the other way, I make it up there, but it doesn't do lap count.

You've to pass 2 important checkpoints otherwise laps won't be counted.

Search "ultra shortcut grumble volcano" on YouTube and watch the first vid (by Roliation). He explains how to do it.
