I play snooker at the club level. There is a different version of snooker called the ' Offensive Snooker' some kind of lightning snooker where its possible to pot 2 reds or 2 colours in succession without being called foul. But this game is surely not that version. Its either fake or referee error.

That is not true. The player only has to announce the colour, if the direction in which he strikes does not give that away by itself. If the referee can't decide which colour is on he should ask the striker which colour.

Most players will announce the colour, if it is not clear which object ball they intend to hit (e.g. two colours lying close together). That's so, because the ref can call a foul, if the striker does not hit the colour the ref expected him to.
